Over-night Oats

Aren’t over-night oats pretty much the leftover oatmeal you’ve made too much of for breakfast that has now gone mushy? Still, you store it in the fridge promising yourself that you’ll eat the rest of it later and conveniently “forget” about it. Except, while you slept, the oatmeal managed to get a new marketing team and by morning came out as the glorified “over-night oats”.

Well, I’m all for not wasting food but unfortunately, mushy oatmeal no matter how you dress it up will still be mushy oatmeal. Instead of using thin non-dairy milks like almond or rice, we’re going with coconut milk. The good news is, because of its thicker consistency, paired with the chia seeds, you don’t have to wait overnight to enjoy them.

Over-night Oats


    1/2 cup coconut milk
    1/2 tbsp chia seeds
    1/4 cup rolled oats
    2/3 cups granola
    1/2 small banana, sliced
    Maple syrup (optional)


Step 1

In a small glass, add your coconut milk, chia seeds, and rolled oats. Stir to combine and leave in the fridge for a minimum of 30 minutes or an hour to set and chill.

Step 2

When the consistency is close to pudding, chuck in your granola, sliced bananas, and a drizzle of maple syrup if you wish.

Step 3

Sit by your window, people watch, and take 5 minutes for yourself to enjoy it.
