Chia seeds makes for a good egg substitute so long as that you are using it to bake goods that isn’t yeast based. For one egg, take your ground up chia seeds and combine with water leaving it to set for 5-10 minutes before using.
Chia Seed Egg
1 tbsp ground chia seed
3 tbsps water
In a coffee or spice grinder, toss in your chia seeds and pulse until the texture is mealy.
In a small bowl, take 1 tablespoon ground up chia seeds and to it add 3 tablespoons of water. Leave it to set for about 5-10 minutes until the consistency is gelatinous before using in your recipe.
